Fresh Berry Trifle

There’s nothing more satisfying than sinking your teeth into a pile of fresh spring berries. This trifle recipe is adapted from the chef’s at the Food Network and will indulge your sweet tooth while giving your brain and heart some healthy benefits.

1 pint blueberries
1 pint strawberries (hulled and sliced)
1 pint raspberries
1 pint blackberries
1 lemon, juiced
¼ cup sugar
1 ½ teaspoons cornstarch

Lemon Cream
1 quart whipping cream
1 tablespoon sugar
½ teaspoon vanilla extract
1 jar lemon curd
1 pound cake, sliced

Combine berries and sprinkle with half the lemon juice. Combine the berries, sugar, cornstarch and remaining lemon juice in a saucepan. Bring to a simmer and allow the berries to break down into juice, about 3-4 minutes. Remove from heat and allow to cool and thicken for several minutes.

Whip the cream, sugar and vanilla into soft peaks. Gently fold in the lemon curd a little at a time. Assemble the trifle by placing a layer of lemon cream on the bottom of a glass bowl. Add a layer of pound cake, then a layer of berries and juices. Repeat several layers and refrigerate.

Homemade Strawberry Ice Cream

Homemade ice cream is delicious, refreshing, and surprisingly simple. You can enjoy this cold strawberry treat from Martha Stewart with only 20 minutes of prep work.

8 large egg yolks
1 ¼ cup sugar
¼ teaspoon coarse salt
2 cups skim milk
4 cups sliced strawberries
2 cups heavy cream

Whisk together egg yolks, sugar, and salt. Add milk and cook over medium heat, stirring constantly until slightly thickened, about 10 minutes. Pour custard through a sieve into a cold bowl set in ice. Stir in cream and let stand until chilled. Churn in an ice cream maker according to the manufacturer’s instructions. Mash together strawberries and sugar and add to ice cream maker. Transfer to a sealed container and freeze at least two hours before indulging.
